Banana Chocolate Chip Muffins
Dairy free, egg free, soy free, peanut free, tree nut free
Makes 12 small muffins
Preheat oven to 325 deg Celsius
In mixing bowl first mix:
1/4 cup organic cane sugar
1/4 cup Earth Balance soy free dairy free “butter”
Now mix dry ingredients:
1 cup flour
1/2 tsp baking soda
1/2 tsp salt
Add to sugar mixture and mix
Mash 2 ripe bananas plus 1/4 cup orange juice (freshly squeezed works best!)
Add bananas to mixture
Add 1/4 cup to 1/3 cup Enjoy Life (top 10 allergen free) chocolate chips
Mix well and spoon into muffin tray
Bake for 40 – 50 minutes
Variation: For Double Chocolate Banana muffins add 3 tbsp of cocoa to dry ingredients
